Cheesy Mexican Fried Rice

Switch over from regular rice by making this unique Cheesy Mexican Fried Rice with some Kissan fresh tomato ketchup for your child’s tiffin. We’re sure your kids would love this cheesy, tasty dish.

Ingredients

  1. Cooked Rice: 1 cup
  2. Boiled Rajma: 1/2 cup
  3. Kissan Sweet and Spicy Ketchup: 3 tablespoons
  4. Chilli powder: 1 teaspoon
  5. Oil: 2 tablespoon
  6. Large Onion, Diced: 1
  7. Garlic pods: 4
  8. Cumin powder: 1 teaspoon
  9. Chopped Tomato: 4
  10. Assorted Veggies: 2 tablespoon
  11. Grated cheese: 50gms
  12. Corn 1/2 cup
  13. Salt to taste

Method of Preparation

  1. In a large pan, heat oil. Add onion and saute until soft and translucent. This will take 5 mins. Add garlic and continue sautéing for two minutes.
  2. Add corn and stir well. Add a little chilli powder and cumin and stir
  3. Add tomatoes and cook for 5-6 minutes
  4. Add rajma, cooked rice and stir well
  5. Add the cheese and cook till it melts. Mix well
  6. Pack in lunch box with salad on the side
