Coconut Jam Loaf

Today’s tiffin recipe is a truly scrumptious Coconut Jam Loaf made with Kissan Strawberry Blast Jam. Desiccated coconut is mixed with the delicious flavours of Kissan Strawberry Blast Jam to make a baked treat with a berry blast that your kids are sure to enjoy.

Ingredients

  1. Whole wheat flour: 1 cup
  2. Desiccated coconut powder: 3 tablespoons
  3. Castor sugar: ½ cup
  4. Baking powder: 2 teaspoons
  5. Oil: 70 ml
  6. Coconut milk: 170 ml
  7. Kissan Strawberry Blast Jam: 2 tablespoons

Method of Preparation

  1. - Preheat oven to 180 °C.
  2. - In a bowl, add the wheat flour, coconut powder, sugar, baking powder, oil and coconut milk.
  3. - Beat everything together to make a batter.
  4. - Pour the batter in a greased tin.
  5. - In a bowl add Kissan Strawberry Blast Jam with some water and mix to a smooth consistency.
  6. - Pour the jam on top of the batter and gently swirl with a skewer.
  7. - Bake the coconut jam loaf for 30 mins at 180 °C or until the skewer comes out clean.
  8. - Allow the cake to cool in the tin, remove and slice the loaf. Serve in the tiffin box.
