Jacket Sweet Potatoes

Vegetable Stuffed Sweet Potato is an exciting combination of cheese and vegetables. Kissan Fresh Tomato Ketchup gives it a tangy twist, adding flavour and moistness to the dish, making it an even more enjoyable tiffin recipe for your child.

Ingredients

  1. Boiled sweet potatoes (medium): 2 nos
  2. Grated cheese: 2 teaspoons
  3. Kissan Fresh Tomato Ketchup: 1 tablespoon
  4. Unsalted butter: 1 teaspoon
  5. Grated carrot: 2 tablespoons
  6. Boiled peas: 2 tablespoons
  7. Salt to taste
  8. Pepper to taste

Method of Preparation

  1. Cut the boiled sweet potatoes into 2 halves lengthwise.
  2. Drain and scoop out, being careful not to break the potatoes, reserve the insides.
  3. Take a bowl, add sweet potato bits, carrot, peas, salt, pepper and Kissan Fresh Tomato Ketchup.
  4. Fill this mixture in the hollowed out sweet potatoes skins and top it with cheese.
  5. Gratinate it for 5 - 6 mins in the oven at 180°C
  6. Now pack it in the tiffin box.
