Paneer Bhurji Pancake

Savoury Paneer Bhurji Pancakes made with Kissan Fresh Tomato Ketchup are just what your little ones need for a wholesome tiffin meal. Crunchy baby corn is paired with protein-rich paneer, delicious veggies and the tangy flavour of Kissan Fresh Tomato Ketchup to give you delectable Paneer Bhurji Pancakes.

Ingredients

  1. For the bhurji:
  2. Olive oil: 2 teaspoons
  3. Diced onions: 2 tablespoons
  4. Baby corn: 2 tablespoons
  5. Mixed bell peppers: 2 tablespoons
  6. Grated carrots: 2 tablespoons
  7. Salt to taste
  8. Green chillies: 1 teaspoon
  9. Garam masala powder: 1 tablespoon
  10. Paneer: ½ cup
  11. Kissan Fresh Tomato Ketchup: 2 tablespoons
  12. Coriander leaves: 1 tablespoon
  13. For the pancakes:
  14. Whole wheat flour: ½ cup
  15. Buttermilk: 150 ml
  16. Salt and pepper to taste

Method of Preparation

  1. For the paneer bhurji:
  2. - Heat oil in a pan, add chopped onions and allow to cook.
  3. - Add baby corn, bell peppers and grated carrots, cook for two minutes.
  4. - Add salt, green chillies, garam masala and paneer to the pan.
  5. - Add Kissan Fresh Tomato Ketchup and coriander leaves. Mix well.
  6. - Transfer the mixture to a bowl.
  7. For pancakes:
  8. - Add flour, buttermilk, salt and pepper to a mixing bowl.
  9. - Mix well to make a smooth batter.
  10. - On a heated pan pour a ladle of the batter and spread it gently.
  11. - Spread the paneer bhurji on top of the pancake.
  12. - Cook the pancake evenly on both sides.
  13. - Allow the pancakes to cool and pack them into the tiffin box.
  14. Tiffin Siders:
  15. Cashews and papaya (or any fruit of your choice)
