Quinoa Vegetable Bhurji

Ingredients

  1. Olive oil: 1 tablespoon
  2. Onions (chopped): 2 tablespoons
  3. Carrots (chopped): 2 tablespoons
  4. Green beans (chopped): 2 tablespoons
  5. Green peas: ¼ cup
  6. Corn: ¼ cup
  7. Salt and pepper to taste
  8. Red chili powder: 1 teaspoon
  9. Turmeric powder: 1 teaspoon
  10. Cumin powder: 1 teaspoon
  11. Parsley (chopped): 1 tablespoon
  12. Quinoa (boiled in salt water): ½ cup
  13. Kissan Fresh Tomato Ketchup: 2 tablespoons
  14. Whole wheat bread: 3 small slices

Method of Preparation

  1. Heat the olive oil in a pan.
  2. Add the chopped onions, carrots, green beans, green peas and corn to the pan and sauté lightly.
  3. Season the vegetables with salt and pepper.
  4. Add red chilli powder, turmeric powder, cumin powder and parsley to the mix.
  5. After tossing the mixture well, add the cooked quinoa to it.
  6. Sauté the bhurji, add Kissan Fresh Tomato Ketchup and mix well.
  7. Your Quinoa Bhurji is ready to serve.
